Coffee goes flat from oxygen more than from damp. An inner lid seats down inside the aluminium neck, and an outer cap closes over the whole thing — two barriers between the beans and the air in your kitchen.

A neck, and two lids

The neck is machined aluminium set flush into the walnut and turned down in concentric steps, so both lids seat on metal rather than on end grain that moves with the seasons.

The inner lid drops down inside the neck and seats there under its own weight; the small knob on its face is how you lift it out. That is the one doing the sealing. The outer cap is plain — it slips over the outside of the neck, and it is the only one you see once the canister is closed.
